since adopting a plant-based diet and lifestyle, I have spent more time in the kitchen in 4 years than I have in my whole life! I have found a passion of mine that I believe is a calling; and there is not much more satisfying to me than preparing nutritionally dense and satisfying foods for myself and my loved ones.

although I love fresh salads and smoothie bowls, comfort food will always be necessary, and this is one of my favorite things to spoon out of my favorite bowl, while under the coziest blanket, with real housewives of beverly hills taking me to my happy place in the background.

the ingredient list is simple, cheap, and the process could not be easier. stick around to find out how you can get from craving to savoring in less than 30 minutes.

ingredients:

  • 3-4 small organic potatoes (red or gold work fine)

  • 2 average sized organic whole carrots

  • 1/3 organic yellow bell pepper

  • 1/2 organic sweet onion

  • 4-5 cloves of garlic, roasted (wrap in foil, drizzle small amount of EVOO, S+P, in 400* oven for 20-25 minutes)

  • 1/2 cup raw unsalted organic cashews (soaked overnight or pour boiling water over and let sit for 20-30 minutes)

  • 2 tsp organic apple cider vinegar

  • 1 + 1/4 tsp organic miso or liquid/coconut aminos

  • Juice of 1/2 an organic lemon

  • 2 tsp mustard powder

  • 1-2 tsp pink Himalayan sea salt

  • 1 tsp paprika (optional)

  • freshly cracked pepper to taste (optional)

  • 1 tbsp nutritional yeast (optional)

  • splash of brine from jarred jalapenos (optional, adds a tangy-saltiness I liked from cheese)

  • splash of hot sauce (optional, but why wouldn't you?)

directions:

  • boil or steam potatoes, carrots, onions, and bell pepper for 25-30 minutes, until translucent and super tender

  • drain veggies, place in high-power blender until creamy and gooey

  • add remaining ingredients and spices, blend

  • add more salt, garlic powder, or other flavors calling your name. Pour over pasta (or potatoes, nachos, directly into your mouth from your blender, etc.)

  • enjoy! repeat weekly for optimal happiness!
