vegan gluten-free veggie burgers
using whole-food, recognizable ingredients that you likely already have in your kitchen, the satisfaction of a hearty and filling veggie burger can be yours tonight!
1 large sweet potato, steamed + scooped out
1 can organic drained + rinsed (well) chickpeas, slightly mashed with a potato masher or fork
1 red onion and 6 cloves of garlic sautéed (I just did in water to save on fats) until soft + fragrant
2 tsp apple cider vinegar
3 tbsp tapioca starch (or binder you have like corn starch etc)
3 tbsp ground flax (same same, whatever you have - try almond or oat flour!)
3 tbsp nutritional yeast
I used pink salt, freshly ground black pepper, garlic powder, cumin, paprika, chili powder, and vegan turkey rub seasoning (this gives it a kind of savory umami flavor but totally optional, I had it around from making vegan stuffing)
pan-frying in a little bit of extra virgin olive oil on each side for about 5 minute OR throwing in the air-fryer are both great options for preparing these!
